Worakarn “Grace” Krittisirikul’s path through contemporary Thai cooking has been shaped by a fascination with what already exists: regional flavours, local produce and traditions that reward a closer look. Part of POTONG’s team from its early days, she worked alongside chef Pichaya ‘Pam’ Soontornyanakij before taking the helm as Head Chef at Khao San Sek.

There, Grace looks across Thailand for inspiration, giving regional flavours a contemporary expression while retaining the richness and familiarity central to Thai cuisine. Rice receives particular attention. Carefully sourced varieties from around the country reveal distinct aromas, textures and histories, turning an everyday staple into a window on the diversity of Thai food culture.

Khao San Sek’s setting in historic Song Wat, now one of Bangkok’s creative hubs, provides a fitting backdrop for introducing both Thai diners and international visitors to ingredients that might otherwise remain closely tied to their places of origin.

Grace has also contributed to renewed interest in sato, traditional Thai rice wine. During her time at POTONG, she helped explore ways of pairing it with Thai food, an interest that complements her continuing focus on local producers.

Her broader ambition is equally grounded: to widen appreciation for Thailand’s regional ingredients while supporting the communities behind them. In Grace’s kitchen, contemporary cooking becomes a way of keeping culinary knowledge in circulation.
