Chef Pam” would make everyone question if they were doing
enough in their twenties. At 21, she won the Asia Youth Hope
Cooking contest by Les Disciples d’Escoffier and a year later was
named by Her World Magazine as one of their “Young Women
of the Year”. Setting her sights on opening her own restaurant in
Bangkok after having worked in various restaurants including with
famous chef Jean Georges in New York, she ended up opening
one from her own kitchen at home. “The Table by Chef Pam” would
become the talk of the town with exclusive seating, reservations
with a three-month long wait time, and even a video about her
made by the now-defunct social media storytellers Great Big Story.
Now, she’s setting her sights on going from “Michelin-trained” to
“Michelin-starred” with her restaurant, Potong, which serves up
progressive Thai-Chinese cuisine. But that’s not all she’s busy with:
as managing director and executive head chef of The X Project,
she handles a number of restaurants under the brand as well as
doing luxury catering for events.
