Chasing sweet dreams with his brothers at the age of 22 by setting up Kacha Brothers, Thai-born chef Dej Kewkacha is the owner of the popular Kyo Bar. It became Thailand’s first and only dessert bar serving an ‘omakase’ menu of just desserts that constantly evolve with the seasons, just like in a traditional Kaiseki meal, using the very best of Japanese and Thai ingredients such as 100% organic Thai Cacao, combined with contemporary pastry techniques. He oversees the whole supply chain, and also all the menu items served at his stores. With his talented pastry skills, he now operates over 50 food & beverage outlets under seven leading brands including the flagship Kyo Roll En, which is a unique lifestyle dessert cafe offering the very best of contemporary Japanese desserts. Apart from his pastry expertise, Dej also speaks fluent Japanese, which he taught himself, and has embarked on a journey visiting prestigious kitchens around the world—from Michelin two-star Ta Vie restaurant in Hong Kong to the Spanish ‘God of Pastry’ Paco Torreblanca in Alicante.
