Though Blackitch Artisan Kitchen is based in Chiang Mai, chef Black, as Phanuphon is known, sources seasonal farm produce from all regions of Thailand. His chef’s table dining experience is usually booked well in advance by patrons eager to taste his omakase-style dishes. He is known for going back to early culinary roots, particularly with seasoning: an example being his deconstructed soy sauce. Over the last year he has been working closely with small fishing communities trying to create value for their catch and he is most proud of being part of the fair food chain. Not only is he concerned with providing tasty artisinal food in his restaurant, he is also motivated by access to food security for all. In 2019 he was invited by Michelin-starred restaurant Sra Bua by Kiin Kiin to collaborate on the Thai Gastronomy Series III.
