Located on Sathorn Soi 6, Ruen Noppagao, designed and built under Linus A.E Knobel’s supervision, boasts modern, slick, and intimate interiors—perhaps not what you’d expect for a restaurant that says its trying to return to traditional Thai roots, but it absolutely works. The mastermind behind each carefully-crafted dish on the menu is executive chef Kanin Sinpan. With his professional life dedicated to Thai cuisine, he is extremely well-versed in regional specialities, their rich tradition, and how they can be elevated further. In fact, chef Kanin is a two-time gold medalist for the classic Thai cuisine at Thailand’s International Culinary Cup.
What completes the fantasy of this authentic Thai cuisine concept is the fact that every ingredient used in the menu is home-grown and locally sourced, and that the ingredients will then be prepared using traditional cooking methods that have been passed down from generation to generation. The sentiment follows through to presentation, with food being served in porcelain dishes endemic to Chiang Mai.
“Our menu is designed to rekindle culinary arts that are in peril,” explains Knobel, “There’ll also be a wide array of signature dishes from the four principle regions of Thailand. Under chef Kanin’s supervision, the cooking techniques will be equally true to tradition.”
