Former head chef and co-founder of Michelin-starred contemporary restaurant 80/20, “Joe” Napol Jantraget, along with his pastry chef wife Saki, has since opened Samlor under Plus 66 restaurant group. Samlor is the latest expression of chef Joe’s unfaltering passion for local Thai ingredients and sustainable cuisine. Since 80/20, Joe has been on a mission to show diners that easily-sourced Thai ingredients can create just as much value on the plate as premium imported ones; all it takes is creativity and knowledge about how to bring out and combine flavours. One of the ways Joe has honed his skills is by spending time with his suppliers, such as the local fishermen, and engaging with them. With Samlor, Joe elevates Thai street food with seasonal ingredients and modern flair, and he hopes to impart his philosophy on sustainable cuisine to the next generation of Thai chefs.
