Akira Back is a chef who doesn't lack in sparkle. The Korean-born, Coloradomaestro has a restaurant empire spanning Paris, Dubai, Toronto, Singapore, Dallas, Hanoi and more. He has cooked for presidents, royalty and luminaries ranging from Paris Hilton to the Dalai Lama. As if not enough, he combines his expanding restaurant empire and cooking with a second career as a pro snowboarder. And his Bangkok venture, perched on the 37th floor of the Bangkok Marriot Marquis Queens Park, is as showy as you might expect from a man adept at marketing his own brand. Yet there's plenty of substance to accompany the style. Back signatures, such as a tuna pizza consisting of a thin crust topped with sliced tuna sashimi with ponzu sauce and truffle oil and micro red shiso, have not suffered from over-exposure on IG accounts across the globe. Another crowd-pleaser, his AB tacos filled with juicy minced wagyu galbi and topped with tomato ponzu sauce is exemplary fusion fare; fun and satisfying. Other hits include octopus with smoked potato foam, salsa verde and anticucho with a selection of creative sushi rolls. A full array of alcohol is available ranging from premium shochu and sake to vintage bottles of bubbly as effervescent as Back himself.
Do not depart without experiencing the unique mini-pizza, either tuna or eringi vegetarian version, both stellar.
