As one departs from Adirak pizza to head home one has to ponder, is this the best pizza in Thailand? Many believe so, borne out by the frequently full dining room, often with queues of hungry aficionados extending roadside. In quick time couple Khun Yo and chef Boom, with no restaurant experience, have built a loyal following. They do not take bookings, so arrive early. The formula is simple, a rustic interior, an outside terrace for the cooler weather, an open kitchen, dominated by an overworked wood fired pizza oven and a blackboard full of specialties. The atmosphere is friendly, a little noisy at times, prompting thoughts of a neighbourhood trattoria. One orders at the counter, and the menu has expanded a tad, with a selection of appetisers including cold cuts, pickled anchovies and mushroom au gratin to nibble on whilst awaiting the arrival of the main event. The undoubted hero is the ingredient; sublime ricotta, unctuous mozzarella, uber-sweet sun-dried tomatoes and a superlative secret recipe pesto. Produce is sourced locally from like-minded artisans. Favourites include fig 'n' blue with an indescribably luscious gorgonzola and the intriguingly named, blood moon with pesto rosso and dead man dancing with eggplant, anchovy and chili need no introduction to their fanbase. Drinks include craft beers, wines and soft drinks.
Every pizza on the black board demands to be tried once, the Pesto Ricotta No.4, remains the outright leader.
