Chef Alessandro Frau and life and business partner Marcella have realised their dream of an Acqua restaurant in Bangkok. Sardinian Alessandro has brought his signature dishes to the capital while creating new contemporary compositions, served in an elegant spacious new venue. Whilst the cuisine is of paramount importance, Alessandro has been adding to his accoladed wine collection, now over 500 labels, accumulating a dream like offering of Italian wines and super Tuscans, and i-evered wines from many other regions. From this collection, the wine pairing to match the degustation menu is a must. For most Thailand-based Italian aficionados, Alessandro's signatures are already legendary, and one may now enjoy them in Bangkok. Begin with Sardinian smoked eel, served with pickled vegetables drizzled with sweet and sour white balsamico vinegar sauce and accompanied by grilled crispy country bread topped with smoked mozzarella and Avruga caviar. Alternatively, Sicilian red prawns with smoked mozzarella cream, Sardinian, sea urchin and Siberian caviar. Pastas are stand out with a delicate tortelli il mare, stuffed with burrata cheese surrounded by vongole juice and squid ink jus.
