Described by the publication as a “signature dish of Northern Thailand”, khao soi is a bowl of rice noodles bathed in creamy broth made from coconut milk, topped with meat and vegetables. As ever, Thai cuisine is proving itself in the global competition, with a total of three Thai soups in the 50 best soups list: khao soi (#1)<\/em>, tom yum (#12)<\/em>, and tom kha gai (#13)<\/em>.
