The interiors blend traditional accents from a 200-year-old Rajasthani door to a peacock mirror mosaic, a 32-foot Kerala backwaters painting and Pichwai artworks, celebrating India’s artistic heritage. The menu serves as a dialogue with chef Rohit Sharma’s travels across India, as he brings to table recipes and flavours encountered on his journey, with dish names following India’s states. Begin with dal pakwan, known as a dish for hangovers, combining spiced lentils, fresh herbs and crisp flatbread, finished with yoghurt, coriander and tamarind-date chutney. Representing western states is keema ghotala, spicy minced beef paired with ladi pav, an eggless bread roll. Main dishes focus on various curry styles such as kumaoni paneer masala curry, an Indian cheese cooked in a tomato-based gravy. Chicken beliram, flavoured with herbs and caramelised onions that add sweetness to the sauce, is enjoyed alongside naan. For dessert, bun-maska ice cream is inspired by the classic Indian buttered bun snack. Ice cream is served alongside hot chai, creating a balanced flavour and contrast of temperatures. Benami kheer, meaning ‘pudding with no name,’ comes from the royal kitchen, with chef Rohit inviting guests to discover the secrets behind its flavours.
