Tambu occupies a spectacular rooftop tented palace at the Avista Hideaway hotel, affording diners panoramic views of lush green forest and the Andaman Sea. Opened in 2023 by restaurant manager Akhilesh Kumar and chef Saurabh Sachdeva, this restaurant was bound to create waves. With a concept of progressive Indian charcoal cuisine, the tasting menu presents modern creations of classic Indian dishes, elevated with leading-edge technique. A more classical a la carte menu is also available. The menu begins with a trio of appetisers, spiced beetroot chop, punchy ragda of sweet potatoes, white peas and smoked labneh, and ram laddoo of yellow lentil, tangy tamarind, and mint chutney. The meal continues with a tableside-prepared chaat, epitomizing the authentic street food setting of Delhi; however, this chaat is notches above, with Japanese shiso leaf, yoghurt snow, and layers of complexity. Memorable dishes include butter garlic Andaman prawns in brown garlic and smoked pepper chutney, pepper fry crab on kopa oven-smoked bread, and ghee roast mutton dosa. The main course presents dishes of signature butter chicken, coconut prawn moilee and lamb chop barrah, accompanied by a range of breads and silken dahl with rice. Desserts are of high standard with an innovative rabdi gujia. Whilst the wine list is concise, the wine pairing has been well curated to partner the bold dish flavours.
