Signature is housed within the Vie Hotel Bangkok, where French chef Thierry Drapeau showcases his cuisine of the soil, bringing together the finest ingredients, and flavours of land and sea. His degustation menu is a culinary journey, filled with delicious creations and many surprises. Things begin in the cosy lounge, with vibrantly coloured, innovative canapés, where one chooses between Le Grand or Le Petit Bouquet, depending on appetite. Restaurant manager Sibnath Das leads the front-of-house team, who are actively involved throughout the evening with guéridon side table presentations. Das will also guide you through the wine list and pairings. Once seated, first up is house-baked bread and butter served at the tableside. The meal continues with dishes including Arctic char with caviar in a fragrant and aromatic broth, asparagus from Provence, and a truly standout Brittany blue lobster. The main dish of Brittany’s pigeon pie is a culinary triumph, with kitchen prowess evident. Next up, a memorable premium cheese board, with a range of accompaniments, followed by gariguette strawberry pre-dessert, an ethereally light and fluffy rose marshmallow with Madagascar vanilla custard and the revealing of the petits fours tree. Signature has come a long way since opening and is now up there with the best of the city.
