Located oceanfront at the Hyatt Regency Koh Samui lies SESUN, the hotel's signature restaurant. Decorated and furnished with vibrantly coloured sofas and beach­ armchairs, this open-air venue has a modern Mediterranean vibe matching the cuisine on offer. Start with an array of tempting tapas including mini beef and tuna tartare, the former on toast and the latter drizzled with avocado cream and both yummy.

Follow with a classically piquant prawn cocktail or even six fines de claires oysters with traditional mignonette and seafood sauce. Be adventurous with seared lobe of foie gras with smoked celeriac, grapes, toasted brioche and a Spanish touch of a fruity sangria reduction.

Whilst enjoying the ocean views select a main course from the grill. Hokkaido scallops with homemade mushroom ravioli, little pockets of earthy flavours and textures, an Australian lamb loin with a Middle Eastern touch of citrusy and floral sumac, or the piece de resistance a black Angus tenderloin served with crispy potato, capsicum and a velvety jus. Complete your dining experience with a stunning baked Alaska with heady grand marnier or an equally boozy rum baba with coconut cream and passion fruit, to lend a local touch. Whilst the wine list is concise, it is well priced and with multiple choices available by glass.
