Chef Thitid Tassanakajohn, known as chef Tonn, has opened Samul in Phuket, his tribute to Thai seafood helmed by talented chef Chatchawan Varahajeerakul (chef Banky). A characterful dining room the backdrop for an eight-course tasting menu focused on 100% sustainable local seafood served samrub style for sharing. A concise list with a creative wine pairing matches excellent dishes. The menu begins with little bites, including nasi dagang, or a deliciously flavourful fish mousse with local rice and pickled daikon and hoi krang or giant cockle in a tasty mushroom reduction. Continue with khao yum, a Southern style fermented fish in a refreshing salad with ginger torch flower.

The experience features a modern take on gaeng som reinterpreted with mousse, glaze, palm heart and pickled papaya, and accompanied with homemade roti. Stand outs include mud crab in yellow curry and kaffir lime oil and fresh Phuket lobster with piquant coriander dressing, sea grape and kale powder. Prawn platter consists of tiger prawn, crispy prawn chin, bisque, fat crumble and oil; clever cooking. A memorable dish of khao op mor din, or Phuket seafood claypot rice, will become a firm fixture. The experience concludes with a creative "tu bo" of sweet potato, pumpkin and red bean, followed by a Chumphon cacao dessert with goat milk and black soy sauce.

          Thailand’s Favourite Restaurants, in collaboration with the Tourism Authority of Thailand (TAT), introduces season 2 of “Culinary Gems of Thailand”, with six new episodes hosted by Natalie Phanphensophon and Nigel Oakins. They venture into the daily lives of some of Thailand’s most colourful chefs as they prepare food for their guests, from farm and market to table. 

          In this episode, Natalie and Nigel drop in on Chef Bank Chatchawan, head chef of Samut Phuket. This restaurant specialises in modern Thai cuisine, focusing on fresh seafood prepared with local ingredients and spices. Chef Bank’s journey began humbly, cooking at home and later refining his skills working alongside renowned chefs. Chef Bank focuses on ingredients sourced from the coastal waters of Thailand and integrating these components into each menu, connecting them to the unique cultures and communities of the local regions he represents. His artistic flair, influenced by his background as a jazz musician, shines through with each dish becoming a harmonious creation. Samut Phuket owes its success to a team fuelled by passion and dedication. Rightfully earning its place as a destination that should be on every food lover’s map.
