Salvia at the iconic Grand Hyatt Erawan, is an Italian neighborhood-inspired Osteria. At the helm, chef Roberto Parentela has created a menu which reflects his Piedmontese and Sardinian roots. The service is engaging with team members keen to recommend, and a wide selection of Italian cocktails and mocktails on offer. The wine list is almost exclusively Italian. Many first-class labels are pleasingly available by glass. There are several cosy and comfortable banquette booths which are perfectly suited for privacy. Dishes are presented in a rustic, yet elegant manner and the cooking is always on point. Begin with18-month dry aged ham from Norcia, cured with grape must or add aromatic Lorenzini melon, for that luxe touch. Continue with pasta, be it hand-made gnocchetti made from Sardinian semolina in a rich pork sausage ragu topped with shaved grana Padano, or a stellar tortelli, hand-made ravioli parcels, filled with spinach and ricotta, in silky sage butter sauce and truffle cream. Seasonal truffles may be requested at table, for a theatrical finale. Main courses include pan-seared Japanese sea bream in white wine or grilled corn-fed baby chicken in red wine, both executed with panache. Or the simple artisanal sausage with garlic mash and a memorable rosemary and pork jus. Complete your Salvia experience with a classic tiramisu.
The daily specials frequently change, however the baked linguine in bread crust, for sharing is a hidden gem.
