Chef Marco Boscaini continues to ensure an authentic Italian experience at Prego, Amari Watergate. Seating flows from the ground floor lobby through to an outdoor streetside area, and a wood fired oven that majestically churns out their memorable pizzas. The dining spaces feel unique, successfully combining elements of a traditional asteria with hints of a typical Italian coffee bar. The joy of Prego is its variety, with a menu ranging across Italian favourites to several creative renditions of mains. Begin with Chef Marco's antipasti, a generous platter of cured meats, including, freshly sliced, paper thin prosciutto, with tomatoes, burrata cheese, and melon. Accompanied by a glass of wine from the extensive Italian offerings, it's the perfect beginning. To follow, is an array of homemade pasta, gnocchi or Prego's signature lasagna bolognaise. If risotto is your pleasure, the risotto alla montanara, but do note, this signature does require an advance order. A recommended main on the lighter side is the succulent and flavourful filetti spigola, a pan­ roasted sea bass with pumpkin mash and butter caper sauce. Don't leave without indulging in the tiramisu. Prego takes this standard to a different level, combining a rich layer of fresh cocoa and mascarpone with a coffee and liquor blend making for a divine finish.
