Review

Paii was introduced as the fine-dining flagship at the W Bangkok hotel in 2019. An upscale take on a traditional Thai seafood restaurant, perhaps a slightly risky venture, in a city where droves of young creative Thai chefs are continually shifting the parameters of the country's cuisine. A few years down the line, this venture continues to convert the doubters with the premium fare served up by head chef Joe Weeraket and his team. Indeed, anyone in thrall to the siren song of the sea will find plenty to love. The chef deserves credit for applying uncompromisingly punchy Thai spices and flavours to his outstanding raw ingredients. His approach is exemplified by hoy nang rom sod where plump Normandy oysters are served alongside house made chili jam and nam jim seafood sauce. Fried rice may sound prosaic, but it's a more impressive proposition when it swallows 500 grams of local mud crab. Epic too is charcoal-grilled giant river prawns served with a sweet savoury choo chee curry sauce and hoy shell pad phong kari where juicy Hokkaido scallops are stir-fried with yellow curry powder. Excellent cocktails and a judicious selection of Thai and international wines round out a wholly satisfying experience.

Paii Indigenous Dishes by Chef Joe

Chef Joe’s endless creativity is on display this Songkran with four new seasonal dishes, each finished with his aesthetically-pleasing presentation and fused with a sense of Thai flavors from local recipes. These specially-prepared dishes derive from Chef Joe’s childhood memories, demonstrating recipes from four different regions of Thailand: Sube Makeua Nuea Pu (northeastern-style spicy eggplant dip with Phuket pineapple and sago cracker), Pon Pla Kub Hoy Shell (roasted salmon and hokkaido scallop dipped in spicy sauce, sticky rice, seaweed and orange), Kaeng Khai Pham (northeastern-style soup with red grouper, squid, black mussels, dill, lemongrass and watermeal), and Goong Kub Hoy Golek (southern-style Tiger prawns and black mussels cooked with pickled cucumber and mango, served with coconut rice).

These seasonal surprises are available throughout the whole month of April, served both as a la carte and as a set menu at 1,490++ baht per person. Paii is open Wednesday to Sunday from noon to 11:00pm.
