Whilst Maison Dunand is a newcomer to the Bangkok fine dining scene, chef and patron Arnaud is far from a stranger. Following many years of delighting diners at Le Normandie he has now opened his elegant tribute to French cuisine with a contemporary reflection of two treasured regions, Savoie and Brittany. His favourites still appear but now accompanied by new creations with the very best of French produce, and truly representing his inspirations. The menu will begin with a basket of stellar breads and butters, setting the scene for a gastronomic experience. Bites and courses follow, showcasing the freshest produce. Oysters from Utah beach with an ethereal celeriac puree and honey, Brittany blue lobster with cauliflower and pistachio and wild caught john dory in a shellfish espelette of stellar quality. Chef Arnaud's culinary talent is never in doubt, each dish precision-executed and a perfectly matched marriage of flavours. Main courses of pigeon with an adventurous touch of coffee, and tenderloin rossini with a genius twist of kampot pepper and seasonal truffle, are benchmarks. The cheeseboard with unique alpine varieties and the seasonal desserts on offer, will guarantee a perfect finish. The wine list is lengthy, littered with French gems including a wide range from Arnaud's Savoie home, and excellent wine pairings.
A visit to Maison Dunand is not complete without chef Arnaud's renowned caviar kristal uni and potato.
