Review

Kiti Panit is a gem in every sense of the word. The building historically characterful, the interior sympathetically restored, and the plates an authentic selection of heirloom Lanna cuisine. Recipes are interpreted with care and presented in an elegant manner, each dish a picture. Begin with traditional nam prik of either jackfruit, tomato or eggplant, all stylishly plated. Vegetables are meticulously chopped and placed alongside the dip. Continue with house made sai oua balls, spicy Northern pork sausage carefully rolled into balls and then skewered, perfectly complimented by a local beer, as is the custom. Signature mains are almost legendary.

Khao soi gai, rich and lusciously sweet, the meat literally falling off the bone with crispy noodles atop. Another chef special of hung lay moo, pork belly curry, is cooked low and slow with meltingly moreish pork. Or try the wild boar, stir-fried with curry spice and cumin leaves, truly a dish to liven up the palate. The dessert offering includes a tempting passion fruit cheesecake and a stellar khao mao gorn rad gati, moist pretty little balls of unripe rice with coconut milk for dipping. Beverage-wise, choose from an extensive range of home-made sodas, a concise wine list some available by the glass, or several lesser seen local craft beers.

Tangmo parfait of seasonal watermelon served knickerbocker sundae style is a winner that needs to be shared.

Culinary Gems of Thailand Season 2 Ep. 3: Kiti Panit

Koktail & Tourism Authority of Thailand

Thailand’s Favourite Restaurants, in collaboration with the Tourism Authority of Thailand (TAT), introduces season 2 of “Culinary Gems of Thailand”, with six new episodes hosted by Natalie Phanphensophon and Nigel Oakins that venture into the daily lives of Thailand’s most acclaimed chefs as they prepare food for their guests, from market to table.

In this episode, Natalie and Nigel had a conversation with the chef who likes to make everyone happy with his food and services, Chef Bus Pramkamon Suantong, head chef of Kiti Panit. With the background of working with the awarded-guaranteed restaurant that serves authentic Thai food, Chef Bus brings his expertise to the 130–year–old mansion in Chiang Mai where he presents authentic Northern Thai Lanna food. His dedication to source the finest ingredients is evident as he goes to the local market for each element by himself. Chef Bus keeps things simple, adding his own touch while maintaining the true essence of flavour.
