Review

Kavee (meaning poet in Thai) offers a symphony of Thai flavours, meticulously composed like verses of poetry. Chef Tae Worathon Udomchalotorn takes great satisfaction in the pursuit of discovering locally-sourced Thai ingredients. Kavee's latest tasting menu 'Drizzle' takes its inspiration from the refreshing aftermath of a gentle rain. The amuse-bouche showcases five distinct pieces, each representing a region of Thailand. River prawns over seabite and prawn fat sauce creates a flavourful taste with soup that is made from shrimp shells enhancing the dish. Crackers from squid ink topped with blue swimmer crab provide a subtle oceanic taste. Another standout is grilled straw mushrooms pounded with fermented fish, adding smokiness and boldness. Signature Khao Yai dry-aged duck is a delightful contrast with its crispy skin and juicy meat with duck sausages adding a unique dimension, when paired with the refreshing watercress. Chef Tae embraces the rainy season by incorporating seasonality into his cooking, resulting in a sauce crafted from 20 different types of vegetables. The star petit fours is toffee, which features a surprising twist with the addition of fish sauce. Kavee curates an extensive wine list catering to a diverse clientele, offering selections from both the old and new worlds, featuring uncommon wine brands, sake and craft beer from Bangkok.
