Cote by Mauro Colagreco at the Capella Bangkok is the fine dining outpost of celebrated Argentinian chef Mauro, proprietor of Mirazur one of the finest restaurants in the world. The Cote kitchen is helmed by Ligurian chef Davide Garavaglia ably supported by restaurant manager Thibaud Charlemarty from Bordeaux in creating and presenting French and Italian riviera cuisine. Several menu options are available, with the pinnacle a carte blanche nine course menu surprise.
The wine list is encyclopedic with multiple gems, plus tempting pairings, and a recently introduced non-alcoholic pairing. The setting is elegant with views over the Chao Phraya, but here it is about what's on the plate. A selection of flavourful bites, stylishly presented, is followed by the memorable Colagreco signature bread to be shared. The menu continues with a delicate bouche of fresh Brittany brown crab and caviar with an intriguing pineapple emulsion. Davide surprises with a stunning lobster dish, dressed with matcha Hollandaise and white asparagus. Dishes continue with wild Sakura trout bathed in a refreshing coconut milk and wasabi balanced creamy jus. The piece de resistance of a vibrant pink pigeon with dates, kumquats and cauliflower has complexity and texture in each mouthful, packed with a sublime flavour. Dessert of coconut, black sesame and curry mascarpone, is a delicious end to the experience.
