There are opposing schools of thought when it comes to conceptualizing a grill restaurant. One the old school view that champions the simple alchemy of quality meats, seafood and vegetables, served alongside a handful of judicious sides and sauces. The other is a moderniser attitude that aims to disrupt what can be an effective but predictable formula. The people behind CHAR, Indigo Hotel's convivial elevated signature restaurant have wisely chosen to fall somewhere between the two. Mainstays of the traditional grill venue are present and correct. You may begin with a Caesar salad or a jumbo crab cake before eating your heart out with a tomahawk or rack of lamb and falling into a food coma admiring the outstanding views over central Bangkok. But subtle, and radical twists are a feature of recently arrived, chef Jaime Rojas. Accordingly, a steakhouse staple like beef tartare is whisked away to Morocco with the addition of harissa and cinnamon, a vegan special of grilled broccoli and cauliflower, meanwhile, lingers in the Levant courtesy of Jordanian spices and an accompaniment of hummus and muhammara. For dessert, traditionalists can opt for a fluffy chocolate souffle while adventurers can continue to expand their horizons to Rojas native Mexico on this occasion with polenta corncake with dulce de leche, caramelized bacon and coffee ice cream.

Lanna X Latin Chef’s Dinner: A sweet marriage between Northern Thai and Latin culture

CHAR Bangkok is hosting a fun, sharing-style feast to create a unique culinary experience for diners to explore Northern Thai cuisine without leaving the capital.

Welcoming the spirit of both Northern Thai and Latin culture, the culinary teams of CHAR Bangkok, helmed by Chef Jaime “Jimmy” Rojas and Chefs Denwers Rattan and Jamrian “La” Chumpoo from InterContinental Chiang Mai Mae Ping have collaborated to create a unique culinary experience available only on March 16th – 17th 2023 at CHAR Restaurant.

Situated at Hotel Indigo Bangkok Wireless Road’s rooftop, diners will experience a new interpretation of their favourite classics at this special dinner. The highlights of this exclusive culinary experience include trying some authentic Northern Thai recipes showcased alongside Chef Jimmy’s vision of playing with flavours innovatively, with a sharing-style feast. Chef La, a locavore by passion and Northern Thai Chef at InterContinental Chiang Mai Mae Ping, will be carrying fresh herbs and produce from the hotel’s garden to Bangkok, and will present his traditional cooking techniques. Alongside, Executive Chef Denwers Rattan who is a Lampang native,  will be preparing dishes like “Nam Phrik Num” and “Nam Phrik Ong” chili dips, with crispy pork crackling, and sai oua sausage on the side. There will also be main dishes that are comforting yet elevated fare such as “Hang Lay” pork belly curry and “Aep Pla” marinated snakehead fish curry. 

Diners will be able to indulge in bites such as freshly pounded chilli dip alongside a nam phrik ong-inspired pâté with house-baked focaccia or relish in some unique taco renditions such as the beef cheek khao soi corn or the braised pork hang lay soft flour taco. To sweeten up your evening, the best of both worlds will be brought for dessert including delicious flavours and textures of “Kanom Thien” steamed sticky rice with coconut served alongside coconut panna cotta with caramelized bananas or Chiang Mai strawberry with yogurt ice cream. 

Enjoy this dining experience with your partner or loved ones. The sharing sets with be available starting from  2,600++ baht per set for 2 persons or 4,900++ baht per set for 4 persons, including pre and post drinks for each diner. This dinner will be limited to two nights from Thursday, 16th – Friday, 17th March 2023 from 6:00 pm onwards, with musical entertainment. For wine lovers, there are options of Thai and Latin American wines also available for special prices.
