Casa Boho sits mountainside overlooking the Hyatt Regency Hotel at Kamala Bay and the long beautiful views of the Phuket coastline. From this lofty perch, Chilean chef Fernando Bravo presents his favourite South America cuisine from Peru, Argentina and his native Chile. The restaurants has a long lap infinity pool in front of the dining area and a nightly international DJ keeping the rhythms flowing. Relaxing recliners allow guests to lay back to the music between swims while enjoying a variety of rum and tequila cocktails, including Phuket horchata, blanco tequila, Lanna rice vodka, coconut, cinnamon, vanilla and milk plus an impressive imported collection of gin varietals. Begin with traditional fresh scallop and prawn ceviche enhanced with Peruvian leche de tigre salsa, red onion, coriander, Thai mango, hass avocado and sweet corn. Then try tasty empanadas de carne, Argentinian-style pies stuffed with slow-cooked Angus beef chuck with red capsicum, boiled eggs and green olives served with chimichurri sauce. De birria tacos are filled with 72-hour braised short rib and beef chuck roast. There’s also Australian beef steak and a big selection of fresh fish and seafood all enhanced with chef’s salsa, spices and addition of lightly cooked fruits and vegetables. The Cajun rubbed blackened salmon is delightful served with papaya salsa, black beans, guacamole and sweet potato purée.
