Blackitch Artisan Kitchen is firmly on the travelling gourmet's map. Established by couple Chef Black and Khun Beer showcasing artisan ingredients, locally sourced or foraged from across Thailand. Then expertly cured and fermented, cooked and presented in innovative combinations, surprising diners with distinctive flavour and texture profiles. Seasonally changing menus, featuring the bounty of Thailand, are always eagerly awaited by their loyal following. Guests need to book well in advance to ensure a table in the petite, recently refurbished upstairs dining room. Menus are a lengthy combination of mini bites, touching on Thai influences and other Asian cultures.

Dishes include a sublime signature chicken rice accompanied by a comforting flavourful black chicken soup, chicken pate served with focaccia and rice field crab paste. Northern Thai pork broth with house made udon noodles is followed by sea scented oyster in Southern curry, all making sense as Chef Black, ably assisted by Khun Beer, narrates the stories behind these elegantly presented delicious compositions. Iberico with pickled fish on toast, leaves one wishing for another. Portions are generous and hospitality legendary. The dessert course is highly anticipated, the domain of Khun Beer, with banana tacos, an orange financier and Amasake cheese pie. A short but carefully chosen selection of wines and sakes is more than sufficient.

In collaboration with the Tourism Authority of Thailand (TAT) to highlight the sustainable and creative culinary efforts of talented Thai chefs throughout the nation, Koktail Magazine introduces “Culinary Gems of Thailand”, a new six-part series that goes into the daily lives of Thai chefs as they prepare food for their guests from market to table. The first episode features Chiang Mai’s scintillating zero-waste chef’s table restaurant, Blackitch Artisan Kitchen. As the restaurant’s seasonal menu highlights fresh, local ingredients, we start the day with Phanuphon “Black” Bulsuwan at Chiang Mai’s “Kad Hor” market, where the Blackitch chef takes us through a diverse line of produce. The distinctive flavours will unite harmoniously in a home-cooked preparation, elevating the taste of each ingredient. On the patisserie front, chef Black’s wife “Beer” harvests her ingredients from Wild Nature Artisan organic farm, which will later be transformed into dazzling heavenly bites. The husband and wife team urges food lovers to explore flavours beyond their comfort zone as extraordinary Thai food lies within every corner of the kingdom.
