Aquaria is a new opening from acclaimed restaurateur and chef Phubase, located in the tropical setting of the Spice Garden lifestyle complex. The varied selection of Mediterranean-Italian-influenced dishes with Asian touches will satisfy a wide range of epicurean palates. Menu sections include grilled meats, tapas, pasta, and salads, with an additional medley of extra sides and sauces. Seabass ceviche is a firm tapas favourite, brined with a powerful citrus tang with chunks of refreshing pineapple, elegantly balanced with pomegranate, red pepper, salmon roe and dill. Those seeking a richer entrée may be drawn to barbecued pork ribs, dressed in a smoky sauce balancing elements of fruit and heat to extract the best from the slow-grilled tender meat.
