Here, take your time over Alaskan king crab wrapped tightly in a crisp shell, layered with house-made pickles, seaweed flakes, lemon mayo and a glimmer of Hua Hin caviar. Quinoa becomes vibrant and nourishing, paired with tart feta, creamy avocado, sweet pomegranate, a sprinkle of sunflower seeds and a verdant pesto drizzle. Today’s Catch is freshly caught Andaman fish, perhaps a crisp-skin grilled local seabass resting in a Mediterranean broth of citrus and capers. Seared Phuket lobster, accompanies homemade linguine, steeped in aromatic thick lobster bisque topped with peppery rocket, cherry tomatoes and a splash of herbaceous green oil. The Nicolas Feuillatte champagne bar sets the tone for laid-back indulgence and as needed service. The wine list is fresh and playful and well-priced. Cocktail highlights include a homemade sous-vide orange liqueur, pomelo syrup, el Jimador blanco and a dash of celery bitter topped with prosecco. Perfect for lingering a little longer, sipping slowly as the sun melts into the big blue.
The wood-fired truffle pizza is a moreish delight.
