Chef and owner of Mad Beef, Cher Attakanwong promotes sustainable consumption of beef through her chef’s table. Tucked inside her sister’s—Porntip “Mook” Attakanwong—contemporary art space ATT19 gallery on Charoenkrung, the restaurant boasts striking carved wood columns over the bar with a wall of greenery. Just like the name suggests, every dish served includes beef. Other than the nose-to-tail concept, Mad Beef strongly focusses on the texture of the meat in each dish, as well as allowing diners during the meal to experience all parts of the cow along with detailed explanations of what is being eaten. With plenty of culinary experience, Chef Cher has previously worked in restaurants in Australia and implements many Western cooking techniques into her dishes. At the same time, diners can also feel the chef’s passion for Asian cuisine, such as infusing Japanese-style recipes into her cooking craft.
