Behind The Curtain is a sophisticated cocktail bar located below the ground level of Mia Restaurant, led by bar manager Marc Perez Rodriguez in collaboration with chef Michelle Goh. With only six seats, the newly opened bar offers an exclusive omakase dessert and cocktail pairing experience of five desserts and five cocktails (or non-alcoholic drinks, upon request). Marc and chef Michelle are the masterminds behind this pairing concept. The menu reflects Marc's passion for classic cocktails and Asian flavours, as well as chef Michelle's Australian and Japanese cooking influences.

The evening began with a refreshing mango sorbet, homemade fish floss, and lime topped with ikura, paired with roasted mango cordial and champagne—a light, refreshing intro to what was to come. The following course consists of pandan cream jasmine puffed rice and lychee sorbet coconut snow, paired with a floral cocktail of cachaca, shochu, lychee, ginger syrup, lime, and Yopol. The attention to detail is evident.

My personal favourite came next: the moscato custard shiso with plum sorbet and salted plum. The dish allows each flavour to shine through, while providing the right amount of balance. This was paired with a fragrant sake, red wine reduction, and bitters cocktail perfumed with limoncello. Packed with nostalgic flavours and the star of the show, not to mention chef Michelle's favourite pairing, is the dark chocolate coffee topped with Bailey's ice cream macadamia—paired with a hazelnut liqueur, oolong tea syrup, coconut milk, and the perfect citrus/nutmeg balance.

We finished the journey with the vanilla souffle roasted barley ice cream black truffle with mezcal, vanilla syrup raisins, coffee beans, and milk with a touch of lime—perfectly rounded out the omakase experience.
