New Bukhara has been serving traditional North Indian fare on Sukhumvit 7 for twenty six years. The menu spans tandoor classics and regional curries, available in five spice levels. Start with pani puri; crispy hollow spheres you crack open and stuff with spiced potato, chickpeas, and tamarind water that hits sweet, sour and spicy in one bite. Mutton rogan josh is braised mutton with garlic, ginger and cardamom; fork tender. The rust red gravy builds warmth, oil carries the aromatics and josh leaves heat on your tongue. Butter chicken brings tandoor char smoke into creamy tomato gravy without feeling heavy. From the tandoor grill; chicken tikka, mutton boti kabab, fish tikka, hariyali tikka with its mint coriander marinade, paneer tikka, seekh kabab and tandoori prawns, all showing clay oven char from the high heat treatment. Dal masala is yellow lentils cooked with cumin, turmeric and garam masala. Earthy, warming and filling, in a smaller portion than other curry dishes. Naan lands blistered and smoky straight from the tandoor walls. Plain, garlic, butter, mint, paneer or stuffed versions are on offer. Perfect for mopping up every bit of curry. For dessert gulab jamun; warm cardamom milk balls that soak up rose syrup. Mango lassi goes down thick and smooth, creamy yogurt blended with mango minus any stringy texture, refreshing throughout.
