This brasserie’s interiors are striking and inviting with soft lighting and contemporary art details and stories behind each aspect, creating a space to mingle and enjoy. There’s a subtle rhythm to Colette, one that feels refined and relaxed, where time slows enough to savour the moment. The menu flows naturally from breakfast through dinner, balancing continental favourites with creative twists. For dinner tuna tartare is delicious chunky bites of bright, clean flavours lifted by mustard seeds and the crunch of potato chips. Beef and onion soup, deeply caramelised and crowned with molten cheese, provides comfort with rustic elegance and grapefruit and avocado salad makes for a zesty start to any meal. Whole roasted baby chicken is served on a bed of thyme sprigs with miso sauce, delectably salty and juicy and not be missed among the mains. Lobster tagliatelle is luxurious yet comforting. For dessert a classic mille-feuille is executed wonderfully with crunchy pastry, English cream infused with earl grey and caramel sauce. The bar brings its own character, with an impressive mixology programme and a selection of contemporary, organic and orange wines paired well with the food. Service is friendly, polished and never hurried. Colette has a rhythm between French charm and Bangkok spirit, where every moment feels like the right time to stay a little longer.
Colette evolves gracefully through the day, from the aroma of morning coffee and buttery pastries to the hum of conversation over dinner and cocktails after dark.
