Choose from the signature 10-destination journey around the cuisines of India or its 10-course vegetable alternative. Beverage pairings offer a traditional wine option, a more adventurous Indian beer, sake, wine, umeshu and Madeira mix, an alcohol-free selection or you can customise things as you wish. There is a quiet intensity from the talented kitchen team as they work in harmony to produce each plate. Menus change from time-to-time but the open fire oven works hard as dishes move from Delhi, chaat with its mix of four essential flavours: tangy, sweet salty and spicy, then on to Gujarat, represented by patra made from colocasia leaves layered with shiroita and oboro kombu seaweeds and Hokkaido scallops for umami depth. Mumbai has flaky khari pastry filled with kheema lamb, then choices for bread precede Punjab, Tamil Nadu and other city specialities and the finale of fresh fruits and petit fours.
