Review

Named after Italy’s most prestigious Barolo vineyard hill, Cannubi is the latest fine dining restaurant from celebrated chef Umberto Bombana who entrusts protégé chef Andrea Susto to bring the soul of Northern Italy to Bangkok with authenticity, refinement and flair. Located within the reimagined Dusit Thani Hotel, the room blends sleek marble and warm wood with wine-toned accents. Its perch overlooking a recreation of the iconic waterfall garden provides a nostalgic connection to the hotel’s heritage while an adjacent award-winning cellar of fine labels reflects Cannubi’s ties to Marchesi di Barolo, one of Italy’s most storied wineries. Cannubi honours Italian tradition through à la carte offerings while embracing seasonality in tasting menus which incorporate ingredients sourced from Italy and Thailand’s best farms and provide diners with novel encounters throughout the year. Meanwhile, Bombana’s famed truffle menu remains a signature experience. Menu highlights include homemade chitarra pasta with Alpine cheese fondue and black truffle, combining silken ribbons crowned with fragrant black truffle and Brittany blue lobster with calamari and clams with fennel confit and lobster bisque, which pairs sweet lobster with tender shellfish, bright fennel and a velvety bisque; and M5 short rib & beef tenderloin. The wine program is Cannubi’s heartbeat. Marchesi di Barolo vintages headline, joined by an expansive Italian list spanning Alto Adige whites to bold Sicilian reds.
