An à la carte selection sits alongside three seasonal omakase courses, with ingredients imported from Japan. The omakase course includes appetisers, sushi focused main, grilled and fried seafood, a meat dish, noodles, soup and dessert. Fresh sushi topped with a variety of ingredients adds new flavours, textures, and visual appeal without overpowering the natural taste of the fish - such as chutoro (medium-fatty tuna) with black truffle, flounder topped with engawa (muscle tissue of fin), and botan shrimp garnished with karasumi (dried mullet roe). The meat course features steak made from Okayama’s prized Nagi beef. The meal concludes with Inaniwa udon topped with minced tuna, sea urchin, salmon roe, and grated yam, accompanied by a clear clam broth. A refreshing yuzu sorbet dessert cleanses the palate to perfection. Sitting at the counter, watching chef’s precise attention to detail in every dish, and enjoying the sushi by hand enhances the overall dining experience. Wine is available by the glass, featuring bottles from France, Italy, Germany, Chile, Argentina, Australia and the U.S. The sake menu offers around 20 varieties that pair well with sushi.
