Pink pomelo salad with prawn cake, is where deep-sea tiger prawns, kissed with Chiang Rai garlic, are paired with refreshing organic pomelo from Nakhon Chaisri. The dish balances sweet, sour and savoury with freshness that feels quintessentially Thai. Massaman lamb curry, slowstewed free-range lamb, melts into a deeply spiced sauce. Complex and fragrant, it pairs elegantly with a glass of Minervois red. Grilled spare ribs, marinated for 48 hours in lychee flower honey, arrive tender and aromatic. Served with sticky rice and Isan chilli dip, they capture Blue Elephant’s ability to transform familiar traditions into elevated dining. Nam dok mai mango cheesecake cleanses the palate with tropical brightness, a sweet reminder of Thailand’s finest fruit. Service flows with ease, attentive to detail yet never overwhelming.
