Start with burrata paired with heirloom tomatoes, dressed simply with olive oil to enhance natural flavours. Mediterranean octopus roasted until tender and served on a soft white truffle potato velouté, a silky purée with earthy truffle aroma to the dish stands out. Wagyu beef tenderloin tartare combines parmigiano sauce for savoury depth, balsamic pearls for tangy lifts, finished with wild rocket and shaved fresh truffle. Ricotta and spinach gnocchi arrives, bathed in tomato sauce and sprinkled with parmesan. A tangy, herb-fragrant sauce cuts through the tenderness of the dumplings. Shell-shaped conchiglioni burro e alici shifts towards deeper savouriness, pasta coated in butter and anchovies for a concentrated umami, while thick tomato compote softens and rounds out the anchovies’ intensity. Main dish char-grilled pork sausage wheel, is accompanied by a selection of condiments to elevate its smoky flavours. Dessert is classic tiramisu, built from soft layers of ladyfingers and mascarpone, with a gentle coffee bitterness cutting through the sweetness. Or raspberry tart with pistachio ice cream, where tangy berries balance nutty creaminess.
